How the company was founded

The Roussas Family established Roussas Dairy in 1952, and since that time, it has concentrated on manufacturing feta cheese.

What type of company it is

Roussas Dairy think that making good stuff starts with using good ingredients, and that's how they make their cheese – pure and natural. They don't like using GMOs in animal food and only use real milk for their products.

Which open innovation practice are you describing

The modern technology the company is using from start to packing its products. More specifically, along with superior machinery, contemporary hygienic requirements, and the family's dedication to producing high-quality goods, traditional feta production methods persist there. Roussa’s ability to produce the same traditional, original Greek cheese products of premium quality as their Greek ancestors did is made possible by modern technology, which also allows them to improve the quality and lengthen the lifespan of their goods.

Why it was successful

Thanks to the technology Roussas Dairy use, the company can now make more than 10,000 tons of cheese every year and can process 80,000 litres of sheep's milk in each work session.

Who is the target group of the solution

Feta cheese lovers.

What is the portability of the practice and are there any transversal aspects for application across other sectors

These cutting-edge technologies can be used in other sectors that are relevant to the production of food.
